A beautifully consistent growing season produced pristine fruit that left winemaker Rob Paulazzo bursting with excitement. “Canberra District Shiraz grown in 2025 was considered outstanding,” he shares, and we all know that great fruit leads to exceptional wine! The grapes were handpicked at their optimum flavour and tannin ripeness before Rob began the careful winemaking process. That included using several barrels of different aged French oak and hogshead, ensuring a Syrah that is medium-bodied with silky mouthfeel and welcome intensity.
It’s a lovely vibrant red in the glass, with beautiful aromas of red cherry, white pepper and plum. Toasty oak and vanilla hint around the edges, too. This is an elegantly structured wine that tastes great in your mouth, with flavours of bright red fruits and spicy oak. Overall, it’s an elegant, bright and richly concentrated wine, which is a true expression of the spicy and floral nature of the Canberra region.
This high-altitude, single vineyard wine allows a pure expression of this unique area, home to some of Australia’s most admired cool climate Syrah. It’s often compared to the Syrah of the Northern Rhone region of France. It is more subtle and complex than some of its typical counterparts, with higher natural acidity and softer tannins. You’ll also notice more cherry and floral flavours too. Rob’s Syrah is a strictly limited release from a stand-out season, so don’t miss your chance to enjoy a fresh, cool climate expression of an Australian classic!

A single vineyard Shiraz from the Orange region. Winemaker Drew Tuckwell selected fruit from the lower elevations, where it is warm enough to fully ripen Shiraz grapes while still maintaining the elegant, restrained, cool climate style Orange is known for.
Drew used several techniques to introduce complex flavours. The Shiraz was matured in a single, large oak barrel, maintaining freshness and giving it a unique texture. The result is just a hint of oak, making it very approachable. It’s a bright wine, with smoky, flinty aromas that waft out of the glass.When you take a welcome sip, there’s aniseed and spice and long, lingering flavours. This isn’t a big, bold red. It’s refined, restrained and very easy to drink.
It’s a limited release, and a great showcase of a modern take on Australian Shiraz. “It’s moving away from the blockbuster versions of the previous decade,” explains Drew. “If you can't keep your hands off it, then it is a terrific and delicious, young, vibrant wine. But it has the potential to evolve for a decade, stashed under your bed.”

Shiraz is undoubtedly one of Australia’s most loved Red varietals and the Hilltops region in NSW is a superb location for cool climate Shiraz grapes. Winemaker Rob Paulazzo managed to secure meticulously selected superb fruit from a single vineyard for his 2023 Shiraz, resulting in a wine that’s bursting with flavour! The previous releases of this wine received huge scores from James Halliday, and were awarded a swag of Gold medals and trophies. “This is my best Shiraz,” Rob says proudly. “Only the finest barrels make the cut. At this price, a single vineyard Shiraz packing this much punch (and more than 10 years ageing potential) is seriously unbelievable value!”
The weather in the lead up to this vintage was cool and consistent, which allowed for a flavourful, expressive harvest of grapes. “Hilltops Shiraz grown in 2023 is considered outstanding,” reveals Rob. “The quality of the fruit for this wine was pristine.” Great grapes make sensational wine, and this drop is just that. It’s a deep, vibrant red with purple hues. It has intense aromas of dark plum and black cherry, complemented by hints of floral spice, white pepper and toasty oak.
Take a sip and you’re treated to a medium bodied wine, with elegance, intensity and length. There’s juicy red fruits and pepper spice, before a full and savoury core with lovely toasty oak, and long, soft tannins. This has great intensity and concentration to it, or as Rob puts it, “It’s an iron fist in a velvet glove.” It’s available in strictly limited quantities, “So do your tastebuds (and cellar!) a serious favour!” laughs Rob.

John & Dan's attention to detail is undeniable. Premium fruit was crushed into open fermenters and then transferred to French and American oak for 14 to 16 months. Sourced from old Eden Valley and Barossa Valley vines, this super premium shiraz is modelled after a wine extremely close to Sorby’s heart - he made the iconic Yalumba Octavius from inception in 1988 through to 1999.
It’s rich, juicy red and blue berry flavours carry an underlying hit of mocha and coffee. This delicious character is a result of maturing in French oak barrels that have had special red carpet treatment before coopering. The oak character is powerful and unique!
It’s a superb example of a fine South Aussie red by a legendary winemaker. The amazing length of flavour and richness will reward cellaring for at least 15 years, if you can bear to wait!
