A practically perfect product of Adam Barton's winemaking wizardry. This wine was sourced from prime low yielding, dry-grown Shiraz from two top spots in the Clare Valley and given the kid gloves treatment in the winery.
First up, a hit of violets, blackberries & cloves draws you in. Then, a powerfully juicy wave of blueberry, blackcurrant, liquorice and chocolate washes over your tongue and clings to your lips. 18 months in French oak has softened the tannins to balance the whole experience out.

Grapes were sourced from the acclaimed Light Pass sub-region of the Barossa. Caroline’s fresh, uncomplicated approach to winemaking allows the fruit to speak for itself.
The wine was matured in seasoned French oak for 18 months to promote a soft, silky texture and subtle complexity without picking up dominant oak flavour. Bright, fragrant aromas of blood-plum, mulberry, blueberry and blackberry, with hints of star anise, savoury spice and red licorice.

Shiraz is undoubtedly one of Australia’s most loved Red varietals and the Hilltops region in NSW is a superb location for cool climate Shiraz grapes. Winemaker Rob Paulazzo managed to secure meticulously selected superb fruit from a single vineyard for his 2023 Shiraz, resulting in a wine that’s bursting with flavour! The previous releases of this wine received huge scores from James Halliday, and were awarded a swag of Gold medals and trophies. “This is my best Shiraz,” Rob says proudly. “Only the finest barrels make the cut. At this price, a single vineyard Shiraz packing this much punch (and more than 10 years ageing potential) is seriously unbelievable value!”
The weather in the lead up to this vintage was cool and consistent, which allowed for a flavourful, expressive harvest of grapes. “Hilltops Shiraz grown in 2023 is considered outstanding,” reveals Rob. “The quality of the fruit for this wine was pristine.” Great grapes make sensational wine, and this drop is just that. It’s a deep, vibrant red with purple hues. It has intense aromas of dark plum and black cherry, complemented by hints of floral spice, white pepper and toasty oak.
Take a sip and you’re treated to a medium bodied wine, with elegance, intensity and length. There’s juicy red fruits and pepper spice, before a full and savoury core with lovely toasty oak, and long, soft tannins. This has great intensity and concentration to it, or as Rob puts it, “It’s an iron fist in a velvet glove.” It’s available in strictly limited quantities, “So do your tastebuds (and cellar!) a serious favour!” laughs Rob.

Sourced from 3 separate blocks of Shiraz to give the finished wine the right balance of powerful and elegance.
Josh set about capturing those wonderful fruit characters and flavours in the winery using a minimal intervention style and native yeast (from the grapes). 15 months in oak barrels finished the job and the wine was bottled unfiltered.
Look out for the mocha, raspberry, blueberry presence with a shake of spice. Richly layered with length and freshness, this is a classic Barossa Shiraz that over delivers in quality for the price!
