- Once again Stuart brings us an out-of-this-world Top Shelf beauty, poised to blow the socks off any Chardonnay or Margaret River enthusiast. Truly a labour of love, there was no crushing in the creation of this juicy treat. All grapes were whole fruit pressed to lock in maximum aromatics and complexity.
- Matured in a combination of new and older Burgundian oak barriques for 12 months, and then held back in tank for longer to allow the flavours to meld, and the wine to gain poise. Scents of lemon curd, peach skin, pink grapefruit, and citrus oils leap will from your glass. Notes of hazelnut and vanilla follow to really get you salivating!
- The palate packs texture and weight of flavour beyond expectation. This is off-set by a mineral acidity that makes the finish fresh without dulling the persistence of flavour. Stuart has created a wine of nuance that manages to walk the tightrope of generosity and a clean finish. Above all, it is classic Margaret River Chardonnay that will drink well, as soon as you open the bottle! Stuart's tip? You simply won't be able to buy a Chardonnay with this level of complexity or style, at this price, from anywhere else.
Best before
Makes sure you have a good, cool cellar, and then hide at least 3 bottles in there for 5-10 years. Don't forget they are there, and try one is 5 years time. You will be rewarded for your patience.
Serving advice
Chill a little prior to opening, and perhaps leave it for 30 minutes after opening. Try not to drink all of the bottle in the first night, and finish it off on the second night. You will be surprised just how much the wine will open up over that period.
Food match
seared scallops, panko crusted Augusta whiting, char grilled salmon, by itself on a warm evening.

Meet the winemaker - Stuart Pym
- Meet Stuart.... Born in Perth, Stuart has been making wine for 31 years. He is a legend and the man behind Devil's Lair, Voyager Estate and Stella Bella just to name a few.
- Stuart has made wines in the Yarra Valley, Geelong and Bordeaux. He also undertook a study trip to Tuscany and Piedmonte, Burgundy and the Loire as well as Rioja and Priorat. So you could say he has a fair bit of experience.
- His label, 'Hearts and Bones' celebrate the release of the creative spirit from the constraints of the day to day reality. It is with the support of the Angels that this burst of vinous creativity is able to happen.
