The extraordinary sparkling that has been years in the making!
“2018 just happened to be a really great year,” Winemaker Rob Paulazzo shares. “The fruit looked amazing, the Tassie vineyard that I sourced the Pinot and Chardonnay grapes from had a cracking year. All the stars aligned. The base wine was amazing from the start,” he adds. “I’m really proud of [this sparkling]. It’s exactly what I wanted to make.”
This is a creamy textured, complex and Pinot-dominant sparkling, which Rob describes as “expressive and refreshing.”
“There’s some lovely citrus and green apple notes, some nice berry notes from the Pinot as well,” he says. “There’s something different that it shows you every time you lift the glass - from those fresh expressive fruit flavours to those secondary flavours like brioche and toasty notes. It’s that fresh that it looks like the wine was picked off the vine yesterday,” he finishes.
