About the wine

Born in Mount Barker magic – From the elevated vineyards of WA’s Great Southern, where warm days and cool nights create Rieslings with incredible purity. 2025 was a drier year, with two perfectly timed rain events that kept the vines happy. Despite heavy bird pressure (thanks to low flowering gums luring them into the vineyards), the fruit ripened beautifully and was picked in pristine condition.
Crafted for freshness and depth – Picked in the cool of dawn, trucked straight to the winery and pressed via a chiller to lock in vibrancy. Fermented low and slow for just two weeks, to preserve delicate aromatics. Kym then used her winemaking skills to create a silky, textural mid-palate. The result? Aromas of mandarin peel, jasmine, oyster shell and granny smith, with zippy lime and chalky acidity that lingers long after each sip.
Serious value and cellar potential – This quality Riesling punches well above its price tag, easily rivalling WA benchmarks like West Cape Howe or Shepard’s Hut Riesling. Drink it now for a fresh, zesty hit (serve chilled with lemony white bean cassoulet and freshly caught Pink Snapper), or let it evolve gracefully in the cellar for 8–10 years. Either way, it won’t hang around for long.

Meet the winemaker - Kym Carr
- Rooted in Margaret River, shaped by the world - A lifelong connection to Margaret River, refined by a formative Beaujolais vintage and 25+ years working with some of the region's most respected wineries. "I love wines with texture and body, the kind that make you want to sip slowly and savour every mouthful. That's why I always work with solids and lees to build richness, whether the wine is hanging out in oak or chilling in a tank - it's all about giving each wine a little extra character and soul," says Kym.
- A true one-woman winemaking force - Founder of Dream Bird Wines, Kym does it all: sourcing fruit, making the wine, bottling, labelling, and delivering, with total respect for vineyard and craft. "People are over the big, faceless brands and they are craving a story in their glass. Just like food, wine is becoming personal again - drinkers want to know where it comes from and feel a real connection to it. It's exciting to be a part of that shift."
