About the wine
Two vineyards. One seriously polished Cabernet.
This wine in 3 words:
Magic: Premium McLaren Vale blend
Taste: Blackcurrant. Plum. Cedar.
Food: Lamb. Roast beef. Sunday roast. Two vineyards, one very special Cabernet: This was submitted for our 2026 Christmas Collection, where every wine was tasted by our wine team and Head of Wine. It made the cut - and it’s a beauty. The blend brings together two McLaren Vale vineyards with very different personalities: rich, structured fruit from Symonds Vineyard and fresher, finer fruit from Picnic Grounds. The result is a Christmas-exclusive Cabernet with plenty of depth, but the polish to keep you coming back for another glass.
Power meets freshness: The Symonds Vineyard grows on loam over red clay, giving the wine its dark fruit and structure, while the sandy soils at Picnic Grounds bring lift, freshness and fine tannins. Each parcel was fermented separately and aged for 15 months in French oak before being blended. Think classic McLaren Vale Cabernet - blackcurrant, dark plum and blackberry, with dried herbs, cedar and spice.
A bottle for now and later: It’s already smooth, settled and drinking beautifully, but this is one to stash away if you can resist it. Give it an hour to open up or decant gently if drinking young, then pour alongside slow-cooked lamb shoulder, roast beef or a proper Sunday roast. It’ll happily evolve for 10-15 years, with the fruit softening and those savoury, complex flavours becoming even more pronounced.
Best before
This wine will drink well now, but it really shines with time. You can comfortably cellar it for 10 to 15 years. With age, the fruit will soften and the savoury, complex characters will come more to the fore.
Serving advice
If drinking young, we recommend opening the bottle an hour before serving or giving it a gentle decant. This helps the flavours open up and the tannins relax. Serve at a cool room temperature rather than straight from a warm kitchen.
Food match
You canÂ’t go past grilled or roasted red meat. A slow cooked lamb shoulder or a classic Sunday roast works beautifully.

Meet the winemaker - Bec Hardy
Bec Hardy’s family tree reads like the Who’s Who of South Australian winemaking. Her great-great-great grandfather, Thomas Hardy, made his first wine in South Australia in 1857, kick-starting the state’s wine industry.
Like all the best ‘wine kids’, Bec grew up on the family property, helping out anywhere they’d let her, from training vines to cleaning tanks. But it was her green fingers that steered her down the vine-covered path to success.
Bec’s wines capture the essence of her stunning Tipsy Hill vineyard in Blewitt Springs and the places her forefathers toiled to establish South Australia’s wine industry.
