Velvety: This is a full bodied drop with a velvety texture. It’s a treat right from the moment it hits your glass. There are aromas of blackcurrant and dried herbs, along with a sweet spicy note from oak. There is also just a hint of savoury, which adds complexity. “The trick to making this wine is in the blending,” shares winemaker Sam Plunkett. “How the different components build and bounce off each other.”

He adds this special insight into this limited edition wine’s creation: “You have to be OK at everything, but often winemakers have a particular skill or love of some part of the winemaking process. Some are great in the vineyard, others in the cellar, some find their groove in the lab or at the blending bench. For what it's worth, I particularly enjoy the hands-on part of winemaking in the cellar and the problem solving that goes into getting the best out of the fruit during the mad push of harvest!”

Victoria’s finest: This beautiful blend is a homage to Sam beloved Victoria. He carefully selected standout fruit from particular regions to create a memorable drop. “Cabernet off Duncan Sutherland Cashel Park vineyard was the biggest single contributor to this wine,” Sam shares, adding “with a smaller parcel of Cabernet from the cool climate Booroola vineyard in the Strathbogie Ranges adding a herbal aromatic note. The Merlot came from Baddaginnie Run vineyard in the Strathbogie Ranges and the Bendigo Wine Estates vineyard near Bendigo.”

It’s ideal to share with friends and family… when you all want to enjoy the same wine, and just need that little extra. A magnum isn’t here to be shy… it makes a statement, and Sam’s superb Cabernet Merlot really, really does.
Best before
This Cabernet Merlot is drinking now; but has the structure (tannin and acid) to let it evolve in a positive for several years. And being in the big bottle pushes this out further! So can be enjoyed now, or for drinkers who like more complex savoury flavours this is a wine that can be put away for 4-6 years.
Serving advice
16-18C. No need to decant.
Food match
This is a terrific steak wine - lots of flavour and with enough tannin and acid to mop up some of the fat in the beef. I like to keep it simple with steak off the barbecue and perhaps some hickory chips on the coals. The flavour in the wine from being stored in an oak barrel will compliment the smokey note from the hickory.

Meet the winemaker - Sam Plunkett
- Winemaking legend Sam sources grapes from the family vineyard in the Strathbogie ranges of Central Victoria. Winemakers don't come much more in love with their job than him - he'd "happily spend everyday around tanks, barrels, stainless steel toys and wine".
He’s had a meteoric rise from self-taught winemaker to a multi award-winner and even has his own cellar door now! His winery was recently recognised as one of the Top 10 Dark Horse wineries in James Halliday's 2021 Awards.
