About the wine
Brian Fletcher Estate Western Australia Prosecco NV

Crafted in the cool and picturesque Pemberton in the southwest corner of WA, an area renowned for its soft, rounded whites.

To achieve such a delicate style, the grapes were hand-picked and chilled prior to pressing. The effort pays off, delivering a very well-balanced sparkling with solid fruit flavours up front, and a persistent finish.

This sparkling is a match made for Sydney Rock Oysters, fresh prawns or some good quality prosciutto or pizza. Brian recommends serving it as ice-cold as you can get it. “I always chill the glasses in the freezer as they provide quite a bit of heat input to the wine,” he says.
Best before
Prosecco is meant to be drunk immediately. Ageing the wine will give you no benefit.
Serving advice
Get it quite cold before you open - I mean even in the freezer for a while (don't freeze it!). As well, I always chill the glasses in the freezer as they provide quite a bit of heat input to the wine. On a warm day, if you do this, you will be rewarded with a pleasant experience. "Serving temperature" is rather idealistic for Australian summer conditions so take my advice.
If you don't want to finish the bottle, the same applies, keep it as cold as you can as the gas comes out of solution according to temperature. Of course, a stopper helps as well.
Food match
Something light and something at the end of the day - or at the beginning of the day if you are so inclined. I suggest some Sydney rocks from Nelson's Bay or some Hunter River prawns (sorry I grew up in Newcastle).
You could go Streaky Bay as well, but I find them less "oystery" than those from the east coast. You could go some good quality prosciutto or some small Neapolitan Margherita pizza.

Meet the winemaker - Brian Fletcher
- Once the chief winemaker for Evans & Tate, Brian is one of Margaret River’s greatest treasures — and ours! In 30+ years in the business, he’s collected over 50 Trophies and 100s of medals. He works with a trusted network of exceptional local growers who guarantee him the best fruit. “They're as important to the process as anything,” he says. “ It’s their grapes you are drinking and I’m the translator.”
- He’s also a wizz in European wine production, earned through back-breaking vintages in old wineries in Italy and Tunisia. In fact, it was during Brian’s 5-year stint in Italy that he truly found his wine feet and decided there was no other life for him.
- Even with a resume like his, getting Naked in 2012 was a big deal for Brian. It meant he could create his own wines in his own name and share them with big-hearted wine lovers like you. And the direct connection to chat with you is the icing on the cake!
